Mind, body, and plate: Biopsychological perspectives on food choice and well-being with Leighann Chaffee, UW Tacoma, Sciences and Mathematics
Talk Abstract
Efforts to enhance well-being frequently target individual behaviors like dietary choices, yet these initiatives often yield disappointing results and fail to deliver promised health improvements. This may stem from the limitations and biases inherent to traditional research methods for studying eating. In collaboration with undergraduate students, we address these biases by applying a biopsychological framework to explore motivational and contextual factors influencing health. Our developing project leverages open science neuroimaging datasets to investigate the interplay between cognitive control and interoception during food choice. This research challenges the personal responsibility narrative and enhances the study of eating, with the hope of improving outcomes for health and well-being.
Biography
Leighann Chaffee is an Associate Teaching Professor at the University of Washington Tacoma in the School of Interdisciplinary Arts and Sciences. Her research and teaching intersect at her training in neuroscience and interest in health behaviors. Leighann has published pedagogical materials for neuroscience and the psychology of eating, including her 2022 textbook A Guide to the Psychology of Eating. She is also dedicated to high impact practices for students, from research to global learning, and teaches a study abroad course in food and culture in Prague. Outside of UWT, Leighann enjoys beachcombing with her family, elaborate baking projects, and occasionally running.
